Kale Salad

I’m no kale expert… In fact this is my one and only kale specialty. Natalia (remember the baby shower) and I originally learned this from a friend who was into raw food. Natalia has tweaked the salad to make it better over the years, and I copy her.  This a pseudo time consuming process, a little messy, but it’s super healthy and yummy!Essential ingredients:

  • kale (dinosaur kale is best- but sometimes hard to find)
  • avocado
  • sea salt
  • nuts
  • tomatoes

You can add just about anything thing else you’re feeling or have in the fridge…cabbage, celery, cheese, carrots. Here’s how I make the salad:
1: Wash and dry your kale off. The drying part is important.

2: Use your fingers and pull all of the kale off of the stem…
3: Tear up the kale into little pieces with your hands. Try not to be lazy with this part. It’s hard, I know.  Tearing is part of the breaking down process.

4: Add Sea salt and massage into kale… I don’t measure…I just do it little by little until I like the taste :) You can always add more! You can see the salt I use in the picture…

5: As you add the salt and massage the kale breaks down and gets smaller and smaller…

6: Add avocado and continue to massage :) This is a messy process.

7: Toast the nuts. I always use agave and whatever nuts I have on hand…walnuts, pecans, a mixture… doesn’t matter.

Add agave to pan, let nuts toast for 6-10 minutes. Stir them around occasionally. When they are done put them on a plate, and stick in the freezer.

8: At this point, you can add grated carrots, chopped up tomato, celery, feta…

I use different dressings… at the moment, I’m lovin’ the Italian Good Seasons one by Kraft. You just add oil and vinegar and a little packet and shake! The one in the picture is by Balsamic Vinaigrette by Sass. I hope you at give it a try :) Kale is good and good for you!
p.s. I kind of like the name Kale for a girl… what do you think about that?

  5. Made it for dinner and we enjoyed it though I used a food processor for my sanity. Kale sounds more masculine than feminine to me, but I don't think I would name my child Carrot or Broccoli, so I don't think I would do Kale either, but to each his own :)

  8. Mmm, I usually roast kale, but this salad was delicious. We skipped the dressing, added feta and carrots and used salted almonds (no agave). My kids thought it was fun to snitch pieces of kale as I was massaging, so bonus nutrition for the!
